This book is everything any Chef serious cook or an aspiring chef needs to know. It is the foundation of all cooking techniques and a study of ingredients. The greats use it an refer to it over the years. Every executive chef I ever worked for owned it as well as me. I gave my old copy to a young person who wanted to be a chef but needed a foundational build back ground.Book Review: Not for just the Professional

I bought this book after purchasing a book for my son who is learning to cook. It was so informative and user friendly I had to have a copy for myself. It begins with the basics and is extremely informative. This book will be a family heirloom going from one generation to another. I was uncertain if I should spend this much money on a cook book, eventhough it was half off the regular price, and it was well worth the investment! It will be a cook book that I will have for ever. The Professional Chef is the book to have if you want to know anything about the Kitchen and Cooking. This book is visually exciting, well organized, great glossary, and indexed (two indexes: Subject and Recipe). It has gone beyond my expectation with needed information and learning. You will like The Professional Chef... I love it!Book Review: Worth it if you need it.

I'm loving this book. I got the older version because it was cheaper, but its still very useful. Mirepoix is still mirepoix. That said, you don't need this as a home cook. Only buy this book if you are serious about cooking or about learning cooking (and you are already somewhat good at it). Otherwise you'll find it excessive.
