Book Review: Love this book!

LOVE THIS BOOK! My favorite Chef had Ed 7 (from training at the CIA), wanted to suprise him so I got Ed 8 and so far, he hasn't had much time to look at it since I am always using it! I have no "training" (I am a geophysicist) but I have found all of the information on techniques helpful and have been able to pull off a few things that impressed Chef to the point he ate the entire recipe. I guess I will have to get him a new one to replace the one I can't seem to let go of!Book Review: "It is the bible for all culinary chefs"

Anyone who has the slightest interest in becoming a chef or wants to improve their techniques should get this book. It covers everything from actual pictures of "how to" prep most dishes to foods of different cultures. The book goes into great details about the rules of the kitchen, the type of tools a chef would need and has a easy "to go" index in the back to refer to specific foods and dishes. This book has just about everything you need to know about types of food and cooking techniques. We have tried a bunch of the recipes and they have been great. Do not buy this book for the recipes though. This is a text book full of information about cooking. I highly recommend this book for the average chef who wants to know how ingredients interact and how to put together outstanding meals. No chef should be without this book.Book Review: A must read

The is the ultimate resource for any understanding of real cooking. It's not really a cookbook as much as a complete guide to the science of cooking and food prep. Its been said that one could simply read this book and know more about cooking than many chefs.
I found the price on Amazon to be the best (lowest)I could find anywhere. And I mean anywhere I spend days searching the internet.

This book is a very useful tool. I am going to school to become a chef so it was very helpful with getting all the information. This book is WONDEFUL!I have probably ready over this a few times...and it a big book!
It is such a great book; it has so many useful things to know.
I know I will look forward to the 9th edition.
