This book is great: Clarity on the recipes, and background explanation if you want to know more about the lengths they went to in perfecting the recipe.

It really helps eliminate that little nagging voice I sometimes get "Maybe I should add 3 eggs instead of 2" etc, knowing that they already tried several combinations of ingredients to arrive at the given recipe.
