I have this book -- I LOVE THIS BOOK! -- every recipe I try turns out GREAT!!!!! But the book ends abruptly on page 127 (Chapter 10) & yet there are references throughout the book to the mysterious "Chapter XIII" (for instance, page 123 says: "see Chapter XIII for using left-over whites"), BUT THERE IS NO CHAPTER 13! The book ends with Chapter 10 -- yyyyyaaaaahhhhh! OK, so now I am on a quest to find an edition of this book that has the 3 missing chapters ...
In the meantime ...

Chapter I: What Do You Know About Eggs?
"Eggs are high in protein -- a complete protein at that; eggs furnish all the amino acids for building and maintaining body tissues. Eggs contain vitamin A, vitamin B, thiamin (B1), riboflavin (B2), niacin and vitamin D. These are all necessary for good health and good growth. Eggs also contain minerals, iron and phosphorous, which are necessary for maintaining pep and vitality." -- Page 8
Chapter II: The Care and Handling of Eggs
"For the cold-water method of hard-cooking eggs, place the eggs in a suitable pan with cold water to cover about 1/2 inch over the tops. (I tried this & it worked like a charm! The shells came right off & there was NO weird grayish/green ring around the yolks. Perfect!)
