Book Review: How to rescue "Really Fudgy Cupcakes"

I successfully made the "Just Plain Good Cupcakes" for a friend, so I decided to try the "Really Fudgy Cupcakes" for another friend. As soon as I mixed the batter, I knew something was wrong, because it was much too thick and heavy to rise. I checked the comments on Amazon and sure enough, several people had trouble with this recipe. I am an experienced baker who has made countless cakes from scratch, so I decided to fix this problem. I added two more tablespoons of buttermilk to thin the batter and then whipped the two leftover egg whites to fairly stiff peaks and folded them in until no streaks of white remained. These changes made enough batter for seven cupcakes, and they came out very well. They rose nicely, with high domed tops, and had a velvety texture. The only problem was that they were not quite as chocolatey as could be desired because the chocolate was diluted with the addition of the extra ingredients. I think adding another tablespoon of cocoa would help and plan to try this if I make them again. I also read several comments that the frosting was too sweet, so I reduced the amount of sugar from 1 1/2 Tablespoons to 1 1/2 teaspoons. This frosting was delicious and there was enough for all seven cupcakes with a little left over. I think I would add the 1 1/2 Tablespoons of sugar if I was using unsweetened chocolate, but it is too much sugar to use with the bittersweet chocolate called for in the recipe.
This cookbook must have been rushed out to meet a deadline. Doing so has done a disservice to consumers and Ms. Nakos and Workman Publishing owe all of us an apology.
