Just received this cookbook and looking forward to trying healthy whole wheat baking. Unfortunately, except for the whole wheat in most of the recipes ( quite a few recipes call for at least half white flour), the rest of the ingredients were NOT healthy. Many of their recipes called for corn syrup, white sugar, potato flakes, solid vegetable shortening, etc, While I am not a fanatic about no sugar, I am trying to eliminate most of the "white" from my diet. There are better natural sweeteners out there and hopefully King Arthur (love their flours!) will update accordingly.
