Book Review: the one! the only!! the best!!!
Summary: 4 Stars

jacques pepin has taught me so much over the years,it would take 10,000 words to give him the respect he deserves. in 3-4 minutes he can debone a whole chicken then make it look whole again!(i've got to find a video on that one). this book details many of his techniques and does a fine job of it.the photos should be color,and there should be more of them! photos make a cookbook easier to work with,especially for the novice.even so, this book is well worth the price, make it part of jacque's contribution to your cooking style. i'm the home cook version of a chef, i don't follow all recipes exactly and i've been known to substitute ingredients(such as mushrooms in place of truffles)but, following the advice of a chef of pepin's experience has sharpened my skills and i'm certain it will do the same for you.detract one star for the photos, but get the book!

Book Review: It's Called An "Index," People.
Summary: 4 Stars

This tome is well organized, and very helpful--some call it "outdated" but what's classic cooking? Various techniques can be used with other ingredients and vice versa. There's also a bit of trivia and historical anecdotes/backgrounds to make the instruction more interesting.

Some reviewers knock this book for the numbering of techniques rather than the listing of techniques, which in turn leads to "confusion."
My two cents is there's an index in the book.

Book Review: Culinary school in a book

The only reason I am giving a 4 star rating is because all the pictures are black and white. This book is Great. This book is the bible to French cooking. It is very easy to read and follow. I wonder how many thousands of dollars it would cost in culinary school, to learn the techniques in this book. You will not be disappointed with this book.

Book Review: Good book for culinary techniques, some not quite so common

I heard about this book in an interview with Tom Colicchio (from the show Top Chef). It's the basic book(s) that he used to teach himself the techniques to build him into the chef that he is today. It has many useful techniques, and a few that are outrageous to try unless you have tons of time and the guts to do it (skinning a hare to cook it?).

Book Review: Changing my life
Summary: 4 Stars

As someone who likes to cook, but has no training in it, it seems like each page of this book has something that makes my experience of the kitchen richer. Not all of it is practically useful, but even that which is not, offers insight and inspiration.
