This was given to me as a present. I am never going to part with it - very comprehensive, complete with step-by-step pictures. The next best thing to studying at Le Cordon Bleu in France. Dont think twice. Buy it immediately. It is indispensable reading for all cooks. There is no reason you cant master the techniques after reading this book. Thank you very much Mr. Pepin !

Jacques Pepin's Complete Techniques is a wonderful teaching tool. If you want to try something you have never done before, this book will give you the comfort that you have the techniques to do it. The recipes are great, and after using them, the techniques allow you to veer off in your own direction. This is now my most used of my cooking library. Thank you Mr. Pepin!!
Book Review: Very sophisticated Summary: 5 Stars
This is an excellent how-to covering a great many intermediate and advanced-level cooking and food preparation techniques. Many were too sophisticated for my peasant taste - methods more likely to be used by professional chefs in the fanciest hotels and french restaurants. But, there were enough revelations to make the book well worth the price.

This is a very good book, I recommend it for everyone who
is looking to increase their culinary knowledge, however chef Pepin
is not the best-known french cook, I believe that title would belong to
Auguste Escoffier, at least among professional cooks.

It may be from the 70's, but this book is a timeless and indispensable information reference for any serious cook; professional or not. Now, if it would teach me how to mince garlic as fast and perfectly as he does.... RMS
