Not just a step by step photos to demonstrate the techniques but a very useful experiences for every one who like to cook. As a Chinese reader & cooking tutor, I haven't read a book like this before. Mr Pepin really show me the skill in details(For example, remove the bones from a whole chicken.This skill almost a secret in Chinese world!) & willing to share his kitchen experience with every one. No secret to hide !!!
This book is practical & reliable.

There are a handful of essential "cook books" that anyone who likes food should have in their library, and this is one. Jacques, to say the least, is the consummate professional chef, and also an endearing human being. This is not a 'recipe' book. Instead, it explains 'how to cook'. Anyone who is interested in learning 'cooking technique' should get this. Also, the DVD, that shows hands-on how to do things, is worth every penny.

one way to describe the approach of this book is by analogy to building a house:
this book would tell you how to cut, hammer, sheet rock and all that but not how to design or decorate the house..... this doesn't get into flavors, seasoning and menus but it is great on how to prepare that fish or chicken or whatever, the instructions are clear and reliable

If you keep this reference book handy, you will have a sound foundation for great technique and delicious food. There is more to this work than recipes and methods: this book is a key to learning the craft of cuisine. The photos are weak, but this is somewhat made up by the clearly written instruction. The recipes are outstanding, but is the instruction that will really reward those who are 'hungry to learn'.

This is one of my very first cookbooks purchased at the start of my culinary career. This book is extremely well written with both useful tips and illustrations that we assist even the beginning cook in recreating the masterpieces listed there in. From creating the basic brown stock to stuffing a flank steak, there is something in here for any cook or chef of any culinary level.
