This book explains the ins and outs of basic cooking, weather you are using a grill, an oven, or a frying pan. Understand how searing adds flavor, and how to do it properly. There is a chemistry behind cooking, and this book explains it all. So weather you are just starting out as a cook, or have been doing so for years. You need this book to help you understand how heat and food play together, and how to make your dinners more flavorful.
Book Review: Not a book of directions Summary: 5 Stars
I am a huge fan of Alton Brown. I commonly joke about him being my patron saint, but it's because he approaches food with such a fervor and no-nonsense style that you just have to love it. As he himself says in the book, it's not directions, it's a map. He gives you the background behind each type of cooking, giving you the same sort of insights as his cooking show would, so that you can find your own way to cooking fun. If you're looking for a step-by-step guide to recipes, look elsewhere, but if you're a kitchen tinkerer who wants some more knowledge to go by, this is your new bible.
Book Review: My atlas for the kitchen Summary: 5 Stars
Alton Brown is a genius. His forward in the book explains that a recipe is analogous to a set of directions to a house, but what if there's a detour? Or what if you want to go somewhere else after? You're stuck. But now, what if you knew the whole map of the area, not just rote directions. That's what Alton teaches. He organizes by chapters centered on methods of cooking, not types of food. He explains things in software (food) and hardware (pans, utensils, etc).
It's more of a science angle at food, and probably won't help expert cooks, but for someone like me it's great.
Book Review: Alton Brown "Rocks" and Teaches Basic Techniques I Should Have Known for 50 years and Didn't! Summary: 5 Stars
Love this guy! My son-in-law, the chef, and daughter told me about this book. Alton Brown teaches CHEF's types of techniques. For instance: I never could get breading right! It was always a mess and fell off, ultimately. Now I know why: my ingredients were fine! My technique was awful!
Brown writes in a down-to-earth, sometimes humorous way that makes one want to actually READ this entire book!

Book Review: Alton Brown Rocks Summary: 5 Stars
This book is an excellent book for someone like myself who has spent most of her adult life cooking out of boxes and frozen foods. Alton teaches the whys and hows of everyday cooking from boiling water to making sauces.
It is not so much a recipe book, as the recipes included after each chapter are there to reinforce what you have learned. The reading is easy and funny at times.
This book has transformed my thinking about cooking, and I will be buying his other books soon.
