Customer Review: Know Your Vegetarian Protein

Mark Bittman is probably an excellent cook, but his posting on amazon.com indicates a lack of understanding of vegetarian nutrition.

A vegetarian diet can certainly provide ample protein, however Bittman is not providing the right means when he claims that "there is plenty of protein in broccoli, brown rice, and kidney beans." (Disclosure: we have been vegetarians for almost 40 years and have co-authored four vegetarian cookbooks during this time span.)

Non-animal protein comes primarily from legumes, nuts and seeds. Grains can help boost the quality of that protein, however for the most part, when eaten by themselves, neither the quality nor quantity of their protein is impressive. And BROCCOLI? A full cup of cooked, chopped broccoli supplies only about 3.5 grams of protein (a minimum recommendation for an adult ranges from 45-65 grams daily). And the amino acids (or building blocks of protein) it provides are not in a pattern that is especially beneficial. In other words, the small amount of protein they contain is not high quality, usable protein.

Bittman writes that he is "not a vegetarian, and ... not an advocate of a vegetarian diet." While his motives for advocating that Americans eat fewer animal products are valid, he has a responsibility to get it right.
