Book Review: Great Cookbook, Diabetic or Not
Summary: 5 Stars
As someone who has been diagnosed as pre-diabetic, I was happy to find this cookbook by one of my favorite food authors. I've had the opportunity to try several of the recipes and my family enjoyed them as well because they all include regular food and ingredients. Among our favorites are the beef and black bean enchiladas, chicken and sausage couscous jambalaya, white chicken chili with salsa, shrimp and feta pasta (we substituted chicken), and several desserts such as frozen German chocolate mousse pie.
All the recipes - which include appetizers, soups, salads, meat and seafood dishes, breads, and desserts - include nutritional information and the diabetic carb and protein exchanges. I like that the cookbook is easy to read and includes color photographs, and that all the recipes can be put together in about 30 minutes.
I recommend this cookbook to anyone wanting healthy food that is simple to prepare because the recipes are healthy for everyone, diabetic or not.
