Book Review: Too Many Mixes
Summary: 3 Stars
This book does have many recipes that sound interesting, but I am already frustrated with it. Like most gluten-free cookbook authors Ms. Fenster starts with her basic flour blend. Unfortunately, this exact blend is not used in very many recipes. Instead, this blend is merely the base for numerous mixes such as Carol's Cake Mix, Carol's Yeast Bread Mix, Carol's Pancake and Waffle Mix and Carol's Cookie Mix.
While mixes are convenient and speed up the process, I prefer to try a few recipes before I make up an 8-12 cup mix especially when gluten-free flours are so expensive. Unfortunately, Ms. Fenster does not give that option; most of her baked goods recipes start with the mix not the individual ingredients.
I considered sending this book back, but there are some things I want to try and I think I can break down the various mixes to smaller proportions; its just irritating to have to do so.
