Book Review: ICE CREAM FOR THE INTOLERANT
Summary: 4 Stars

With this book and a good ice cream machine you can make delicious frozen desserts, even for the intolerant. No, not the narrow minded- just people who can't handle lactose, caffeine, too much sugar or fat. Italian style ices already use less cream and sugar, counting on whipped egg whites to make the desserts frothy and fabulous. You can substitute lactose-free and caffeine-free milk, coffee, green tea, and cocoa powder, to achieve an even more dietary dessert.

I recently made the orange sorbetto on page 61 using orange/carrot juice and a dash of Triple Sec, and made some vanilla ice cream as a base for a decaf coffee gelato. Yum!
