I received this book the first week of August '09 and, since then, I've been dropping a substantial amount of weight. I couldn't say how much because I don't weigh myself but clothes started to feel loose within two weeks of introducing some changes to my diet and now, four months later, I'm down 4 sizes. My husband has lost weight, as well - his belly is gone and he couldn't be happier.
I've always cooked from scratch but had been using very little butter, trimming animal fat and consuming nonfat dairy for the past 20 years. Well, thanks to Dr. Enig, now I'm back to eating the wholesome foods of my childhood: raw dairy, animal fat and whole grains.
I have replaced white sugar with raw honey (which I buy inexpensively, by the 60 lb pail, from a local apiary and lasts us a whole year) and the cravings for sweets are history. We used to eat ice cream almost every night. Haven't touched it in months. We now eat fruit after dinner.
The virgin coconut oil, when taken 20-30 minutes before a meal, curbs my appetite. Now I eat half the portions I used to and, most importantly, I feel satiated. It's such a great feeling. I thought that, somehow, I had lost the ability to feel full. Well, it's back and now I feel normal again.
I don't like coconut much so eating a tablespoon of the oil before a meal is not very pleasing but I keep doing it because it works. Thankfully, even though the oil does have a slight coconut scent, the food does not smell/taste like coconut when I use the oil in baking or for sautéing.
Drinking homemade beef or chicken stock every night with dinner helps with digestion and, while we are eating foods rich in animal fats, we don't feel bloated like we used to when we were eating low-fat everything.
I've been soaking grains and legumes for months now. I can't say that I notice any difference in the way my body reacts to this but these foods seem to have a much nicer texture when cooked after a 24-hour soaking in whey and water, particularly the bread dough.
We feel much better these days, sleep better and wake up rested and alert. My skin looks and feels 100% better than it did six months ago. My husband's skin has improved too - he used to have very dry upper arms and back. I don't know if this is because we have been using the coconut oil as a body lotion after showering or because the nutrients in the food we eat get absorbed better now due to soaking foods and the intake of good fats, maybe a combination of both.
In a couple of months we'll have our annual checkup. I'll update this review with the test results.
