Some of the more advanced techniques in this book are not described in sufficient detail. For example a recipe for wine sauce just says to add wine but fails to say how much. An inexperienced cook could be confused by the lack of detail. In another instance Peterson simply states "roll out dough," where as another cook book I have gives a 3 paragraph explanation for how the process should be done in a full proof way to make puff pastry. Although I like this book, I would not recommend it. The abundance of glossy pictures are provided while actual instruction is lacking.
