This is the best resource cookbook I've seen. There is so much useful information about food: storing, preparing, cooking, etc. It covers such a wide variety of information (how to tell if an egg is fresh without having to crack it open, how to get potatoes to brown better in the oven, how to prepare and brine a turkey, etc.). In addition to all the great information, there are many wonderful recipes as well. Overall, a great food resource that all kitchens should have (especially for those of us who don't really know a whole lot about cooking to begin with).
Book Review: Terrific! Summary: 5 Stars
This book is designed for the person who wants not just some good recipes, but also is interested in learning the "whys" behind the various techniques described. Why are sauces cooked in this or that way? What properties of certain vegetables affect their shelf life and usage? How does the chemistry of an ingredient affect the preparation of a dish? If you'd like to know the science (no, not the baccalaureate kind) behind what we do in the kitchen, this is one great book. I never thought I'd READ a cookbook, but I did. It succeeds on both levels.
Book Review: Clearly written, scientific explanation of why cooking works Summary: 5 Stars
I don't find this book to be overwritten at all. I find it to be a clear and well-written book on not only how to do something, but why that something works the way it does. I'd question starting out with bread recipes, but on the other hand the Brioche recipe that started the book out is easy to do and quite tasty. This is more of a browser's book than a straight read. I started out with the vegetable section and skipped around from there. The recipes are simple and straightforward, and everyone from beginners to trained chefs will learn something.
Book Review: The Most Used Cookbook in My Kitchen Summary: 5 Stars
If I could only have one cookbook in my home, this would be it. I'm an avid home cook with a small collection of decent cookbooks, but time and time again, I open only this one. Shirley Corriher dispenses her years of wisdom with incredible insight and understanding that many of us cook, but have no idea what we've really done and why we've done it. She takes you by the hand and allows you to know why you're making a recipe a certain way, and then turns you loose to try variations on a theme with what you have at home. What a great cookbook!

What a wonderful book! I have collected cookbooks for years and this is the first one I have found that explains why things go wrong when baking certain items. I have baked for 50+ years and learned so much from Shirley's book. After seeing her on The Food Network show and reading the book,it was if she was speaking to me and explaining about the gluten, and other flours and the combination of ingredients one needs to make a perfect product. It really is more of an information book than a cookbook and thats OK. Well worth the money. Easy read.
