Unfortunately the term "awesome" is overused but here is it appropriate. The book is worth its weight in gold, a treasure trove of critically important cooking information. Read this and you will really know what is going on and why. Some reviewers have complained about the organization, I can't understand why, the book is perfectly well organized, indexed and cross-referenced. Note, this book was written for people who really want to understand why certain recipes produce certain results, it is deeper than the average cookbook, therein lies its virtue. In cooking as in life, knowledge is power.
Book Review: The cure for your cooking problems. Summary: 5 Stars
If you ever wondered what to do to make that baked good come out better, this is the book for you. Not only does the book answer your problem, it teaches you how to make the crisp cookie, chewy or that loaf of bread lighter or why your eggs don't taste like the ones the chef whipped up. Once I started reading, I couldn't stop. I was amazed! I would check the next page to see what new surprise tip was there waiting to be learned. If you ever wanted a book to teach you the how and why of cooking, there is no need to look any further. Spend the money and get this book, it's worth it.
Book Review: Not Cooking for Dummies! Summary: 5 Stars
If you want to understand the chemical processes that take place in cooking (and use this info for fun and profit), this is an excellent book. Now that I know the chemical processes, I can successfully BBQ anything from steak to monkey.I gave this book to a friend of mine who isn't very smart and he hated it. I gave it to another friend who is very smart and she liked it a lot. So, dummies don't like the book. Smart people like it (based on my 3 person sample). If you want a collection of recipes, just use [search engine] on the web and save your money. Bon Ape!
Book Review: The how and why Summary: 5 Stars
This is likely the best book ABOUT cooking in existance. Not a cook book though it has good recipies, but rather the basic whys that get learned only in the best of the cooking schools. You continually find yourself slapping your head and saying, "That makes sense,, Why didn't I think of it." I'm 65 and have been cooking for years, even wrote a cookbook for friends. I learned more ABOUT food from Mz Corriher in the first week than I had in many years previous. This one gets sent to friends who will use and appreciate it. The real 'foodies'. Thanks Shirley JWH

This is not just another cookbook.......it's a book that discusses food properties and the hows and whys of successful cooking. It tells you why certain ingredients are used in recipes, why they work the way they do and why other ingredients may not work as well. It's exciting to read a cookbook that actually explains to you why recipes work rather than just telling you "How Good It Tastes"! I recommend it wholeheartedly. It's not a cheap book, but if you're serious about cooking, it's well worth the money. FatBoys ought to know, JDWilli
