While the recipes are vegan, THEY ARE NOT FREE FROM REFINED SUGARS AND HYDROGENATED OILS. I am guessing that 15 years ago, when the book was published, there was less concern about these sugars and fats. In the savory dishes, an easy substitute for margarine is any oil that you include in your diet...but as for the desserts, I would consult a different cookbook altogether, one that recognizes unrefined sugars as better for you.
