The cheap ball canning book is sold next to the canners in the discount store. But this is the book you need to really can tasty food. The blue book is high in sugar, low in cooking time,,,, lots of over sweet foods that taste off. Canning is a skill, you must have sugar, vinegar and corect cooking time to AVOID FOOD POSIONING.
I am appalled at the people who want to can and ignore the possiblity of killing their friends and neigbors with lack of proper care. We in the US saw a huge problem with canned FP in the 70's, this book will help aviod that , and give you tasty food.

I'm putting together a business plan for my new restaurant and I wanted to stock up on samples of all of my sauces, glazes, and soups..etc.
I decided to Can them and this was the first book I came across on Amazon and it is like Canning for dummies...only better.
There is everything in this book you will need to "properly" Can your goods. This book is mixture of creative recipe ideas and the Real science of canning (I never knew it involved so much).
This is a Must Have if you ever plan on Canning anything.
Be warned....once you start, you can't stop.

Book Review: Lots of recipes!!! Summary: 5 Stars
I love the great amount of recipes in this book, and the helpful sidebar notes. You should be able to find just about any recipe here. I was able to make mulberry jam from our own trees using a recipe from the book.
I really like the getting started recipes at the beginning of the book. They allow you to jump right in. I made my first batch of strawberry jam using that recipe. Turned out great too!!
The canning section in the back is concise and easy to understand as well as complete. This is a great book to add to your collection!

BALL Complete Book of Home PreservingI bought this book so I could learn the old art of preserving. I live in Maine and most of my neighbors have small farms and blueberry fields, so they offer me fresh fruits and vegetables all summer long, but I want to preserve them for those long, cold Maine winter nights.Hehehehehe. This book helped me preserve over 20 different fruits and vegetables and I love it. I now have most of my Xmas gifts all done.

My first encounter with this book was when I checked it out of my local library. But I quickly realized that I needed to own it. If you are interested in canning and preserving and you want one cookbook that tells you everything you need to know, look no further. This book combines the basic techniques and recipes for beginners with sophisticated variations and flavor combinations that experienced canners will want. There are at least a dozen recipes that I am dying to try, such as Spiced Golden Plum Jam and Ginger Pear Preserves.
