I purchased this book with the intent to can excess garden crops. I wanted reliable information as I'd never canned before and didn't want to kill myself with botulism! This book delivered and then some. It has a great introduction section followed by easy-to-follow, trustworthy instructions and recipes. The organization is intuitive, illustrations are great, and as a bonus there's plenty of info about freezing and dehydrating as well.

When I ordered this book, my mother, who is the know all, be all of canning, was a little disheartened with me. She wanted me to use her old, falling apart canning recipe book. When I recieved my copy of the Ball Blue Book of Preserving and showed it to her, she was so impressed that she wants a copy too! It not only has great recipes for canning, but also simple instructions on drying as well. I would highly recommend this book!
Book Review: The Book to Turn To when Canning Summary: 5 Stars
This is the resource book everyone refers to when canning. This book has information about canning safely, canning methods, recipes and more. If you have an abudance of some fruit or veggie this book will have a recipe to help you save your harvest for eating later. This has been an invaluable resource and has paid for itself many times over in the money we have saved canning just some of the simple things like jams.
Book Review: Easy to use Summary: 5 Stars
I'm a first year canner and this book is great for me. The instructions are very clear as are the illustrations. There is a troubleshooting guide in the back with instructions for reprocessing--very handy!
There's lots of classic canning recipes as well as some contempory ones. A great variety. There are also sections for freezing and dehydrating. This will most likely be my second most used cookbook.
Book Review: Bought it for a gift Summary: 5 Stars
It went to Romania with a friend. She had never seen a book about how to can anything. My edition is almost 30 years old and she wanted one as soon as she saw it. We had to make a conversion chart for her from cups and teaspoons, etc to metric measurements. She will use it a lot, and was happy to get the pictured instructions, although the jars and lids they have are different the principles are the same.
