Book Review: Excellent Guide!
Summary: 5 Stars

I got a horizontal smoker as a wedding gift and needed some guide to get me started. This book is perfect for just that! The first few chapters are a great intro to the methods and reasons for smokings, definitions and terminology, what you want to look for, how to achieve it, and common mistakes. There are also some great recipes and methods for cooking all sorts of meats, as well as recipes for bbq sauces, marinades, brines, mops, etc. What I like the most is that the book explains things so that you can create your own recipes. It will tell you the basics of how to balances your salts and spices, etc. and tell you the reasons for cooking a certain way. After that, it leaves it open for you to create beyond the book. Again, great step-by-step directions AND a general guide for your own creation. It has been my smoking/bbq bible. Highly recommended!

Book Review: Most Useful Book on the Subject of Smoking Food

I have read 5 books on the subject matter of smoking food and this is by far the most practical book on the subject matter. I am new to smoking food and was pleased to find true guidelines to use as a reference. Most other books never gave time/temps for various foods which is frustrating for someone new to this. This author is truly experienced and you can trust his advice and he gives specific times for when to add rubs/brines, specific times for smoke cooking. (His advice is not limited to these subjects by any measure, these were major shortcomings of other books that I have read). I learned more reading this book then all the other 4 books on the subject matter combined. I sought books out because I found so much conflicting advice on the internet, this book will remove the confusion while saving your precious $ by not wrecking expensive meats.

Some friends and I decided this year to get involved with BBQ Competitions. In 2009, I had the pleasure of taking a BBQ class with Chef Richard and picked up a copy of his book, Backyard BBQ - The Art of Smokology, at the same time. When we started practicing, I picked up copies for all the guys on the team because the book is filled with great tips and easy to follow advise. We take it with us to all the competitions and you can find us reviewing it regularly. The recipes in the book are fantastic, great if your wanting to try new things or even add new steps to what your already doing. This book has helped me embrace the art of smoking meats and I can't thank Chef Richard enough. It's great to see such a decorated chef sharing what makes his products so good. Also, I'm a big fan of his rubs.

Book Review: A MUST purchase!

Of the 20 or so books I have on BBQ this one is (1) dedicated to smoking, (2) the only one I have read cover to cover at least 3 times and (3) the one book I continue to reference and continue to try his recipes. The book is a must have for anyone who enjoys real BBQ, starter or pro, and his recipes are wonderful, in depth, helpful. Specifically, his "Twice Smoked Pulled Pork" of all the things I have ever done, is simply the BEST thing I have ever done! Chef Richard produced a wonderful book, and in addition to his professional life, teaches BBQ at the Kansas City Culinary Center as well as Smoke 'N Fire, and through these efforts has created a surprising amount of people who now really enjoy and are passionate about BBQ! Thanks

Book Review: Very informative

If you are looking for a book for the most thorough information, this is it. In spite of not having passed the desk of an editor, the vast amount of information presented makes it easy to overlook the typos. In particular he does not tell the reader he/she should use one particular type or brand of smoker, but instead leaves it to the reader's personal choice. He does not look down his nose as his uninformed readers, but writes very much as one would speak, giving the impression he is very knowledgeable and enthusiastic about his subject. His recipes have been excellent. I have been very pleased with this purchase and would recommend it to one who is interested in learning about food smoking.
